Mi Casa Especial Chili

This chili recipe combines grilled chicken chunks with tomatillos, tomatoes, chicken broth, beer, and cannellini beans. It's thickened with masa harina and has chili seasoning mix, oregano, cumin, jalapeno, and lime juice for flavor.
Ingredients
- 1/2 cup masa harina
- 1 1/2 cups water
- 3 cups chicken broth
- 1 (12 oz) can beer
- 1 medium white onion, chopped
- 3 cloves garlic, minced
- 1 jalapeno pepper, seeded and minced
- 7 tomatillos, shucked, rinsed and chopped
- 2 (14.5 oz) cans diced tomatoes, drained
- 1 (7 oz) can chopped green chilies
- 1/2 tbsp Mexican oregano
- 1 tbsp cumin
- 1 (1 oz) pkg Chili Seasoning mix
- 2 1/2 cups grilled chicken strips, chopped
- 2 (15.5 oz) cans cannellini beans, drained and rinsed
- 1/2 tsp EACH salt and white pepper
- 1 tbsp fresh lime juice
- 1/3 cup fresh cilantro, coarsely chopped
- 1 cup shredded or crumbled queso fresco
- 1 cup sour cream
- 1 cup lightly crushed tortilla chips
- 5 green onions, chopped

Method
Mix masa harina and water together in large stockpot; cook and stir over medium-high heat until mixture is smooth. Stir in chicken broth and beer; bring mixture to a boil. Add onion, garlic, jalapeno, tomatillos, diced tomatoes, chilies, oregano, cumin and chili seasoning and reduce heat to low. Simmer 15 minutes. Add chicken strips, cannellini beans, salt and pepper; cook and stir for 5 minutes, or until ingredients are hot. Remove from heat; stir in lime juice and cilantro. Ladle into bowls; garnish with queso fresco, sour cream, tortilla chips and green onions.
Notes: Masa Harina, beer, tomatillos and lime juice give an interesting flavor combination to this chili.
