Mexican Turkey Meatball Soup

Meatballs made with ground turkey, cumin, oregano, serrano chili and rice are simmered in a chicken broth with vegetables.
 

Ingredients

  • Meatballs--
  • 1 lb ground turkey
  • 1/2 onion minced
  • 1 small serrano chili, seeded & minced
  • 1 garlic clove minced
  • 1 tsp ground oregano
  • 1 tsp ground cumin
  • 2 tbsp uncooked rice
  • 2 tbsp bread crumbs
  • Soup--
  • 2 tbsp vegetable oil
  • 1 medium onion finely chopped
  • 3 garlic cloves minced
  • 1 zucchini finely chopped
  • 1 carrot finely chopped
  • 1 cup tomatoes finely chopped
  • 2 bay leaves
  • 1 tsp peppercorns
  • 6 cup of chicken broth (reduced-sodium)
  • Sprig of yerbabuena (spearmint) or sprig of cilantro
  • 2 tbsp lime juice
  • salt to taste

Method

Meatballs: in bowl mix all ingredients together and form 1 1/1 inch balls; set aside. Soup: in soup pot heat 2 tbsp vegetable oil. Saute onions and garlic until soft. Add next 6 ingredients; bring to a boil; reduce heat. Then gently add meatballs and simmer for 20 to 30 minutes. Remove bay leaves. Add sprig of yerbabuena or cilantro and lime juice.

 

Notes: Serve soup with pico de gallo or salsa and sour cream, and warm tortillas--either corn or flour.
