Mexican Angel Hair Soup

This chicken soup contains angel hair pasta that's browned lightly in oil, plus salsa. It's served with homemade pico de gallo sauce and garnished with avocado, sour cream and corn tortillas.
Ingredients
- 8 oz angel hair pasta, broken into small pieces
- 2 tbsp vegetable oil
- 3 tbsp onions, minced
- 2 garlic clove, minced
- 1 tsp cumin powder
- 1/2 cup chunky medium salsa
- 5 cups chicken broth
- 1 cup finely shredded cooked chicken
- Pinch of sugar (optional)
- Salt and pepper
- Pico de gallo:
- 1 large tomato, chopped
- 1/4 cup onion, chopped
- 1 jalapeno, seeded & chopped
- 2 tbsp cilantro. chopped
- 4 tsp lime juice
- salt and pepper
- Garnishes:
- avocado chunks
- sour cream
- corn tortillas

Method
In large soup pot heat oil; fry pasta until lightly brown about 2 minutes. Remove pasta, reserving oil in pot. Set pasta aside. In same pot cook onions until tender. Add garlic, salsa and cumin powder; cook another 2 minutes. Add broth, chicken, pasta and sugar. Add salt and pepper to taste (remember: broth already has salt.) Bring mixture to a rapid boil, then lower heat. Simmer 15 to 20 minutes. Ladle soup into bowl garnish with pico de gallo, avocado and sour cream, Serve with warm corn tortillas. Serve with Pico de gallo: In bowl mix all ingredients together.
