Lowfat Creamy Potato Soup

You can use this soup as a main dish for lunch or a side dish for dinner. Seasoned cooked potatoes are added to a thickened broth seasoned with gravy mix.
Ingredients
- 4 potatoes
- Butter-flavored nonstick cooking spray
- 2 tbsp. steak seasoning
- 1 tsp. ground black pepper
- 2 14-ounce cans chicken broth
- 1 package dry country gravy mix
- 1/4 c. fat-free dairy sour cream
- 1/2 c. prepared instant mashed potatoes
- 2 c. skim milk
- 2 tbsp. cornstarch
- 1/4 tsp. ground black pepper
- 1/2 tsp. salt
- 1 chicken bouillon cube
- 1/2 tsp. garlic powder

Cut and dice potatoes. Add to a large skillet lightly with cooking spray. Sprinkle the steak seasoning and 1 tsp pepper over the potatoes and saute over medium heat until tender, stirring occasionally. In a separate pot, whisk the remaining ingredients together. Heat until just boiling. Add the cooked potato mixture, reduce heat and simmer, covered, 30 to 45 minutes, stirring occasionally.
Notes: *If you prefer your potato soup less chunky, puree 1/2 of the potatoes before adding them to the liquid mixture. *For those who are doing Weight Watchers, 1 cup of this soup is equal to a little less than 2.5 points. *For presentation, crumble 1 slice of cooked Turkey Bacon over each individual serving and top with a sprig of parsley.
