Loaded 2-Potato Leek Soup

A loaded potato soup with a yummy and healthy twist! Make it even lower in fat by using less butter and low-fat cheddar cheese.

Ingredients:

¼ cup Butter
2 Leeks, sliced
1 clove Garlic, minced
1 Medium Sweet Potato, peeled & diced
1 Large Red Potato, peeled & diced
4 cups Chicken Broth
3 oz (1/3-less-fat) Cream Cheese, neufchatel), cut up
1 cup Skim Milk
1 cup Shredded Cheddar Cheese, plus more for garnish
¼ tsp Celery Seed
1 or 2 Slices of Bacon, cooked and crumbled
Salt & Pepper, to taste

Directions:

Melt butter over medium heat. Add leeks and saute for 3-4 minutes. Add garlic and saute about 1 minute more. Add diced potatoes and broth. Cover and simmer for 15-20 minutes or until potatoes are tender. Reduce heat to low, then stir in cream cheese, milk, cheddar cheese and celery seed. Stir until cheeses are melted. Salt and pepper, to taste. Top with additional shredded cheddar cheese and crumbled bacon to serve.

Helpful Tips:

If you like a creamier soup, blend half of soup in a blender, then return it to pot before serving.
