Lauren's Scrumptious Minestrone Soup

This classic soup recipe is full of fresh vegetables and easy to make. For added flavor, add shredded cheese and serve with hot crusty bread.
 

Ingredients

  • 1 medium onion, chopped
  • 2 medium carrots, cut into 1/2 inch slices
  • 2 celery stalks cut into 1/2 inch slices
  • 1 red bell pepper seeded and cut into 1/2 inch pieces
  • 1 medium zucchini, sliced into 1/2 inch rounds and then halved
  • 2 cans reduced sodium beef broth
  • 1 28 oz can low-sodium crushed tomatoes
  • 2 15.5 oz cans low-sodium kidney beans, drained and rinsed
  • 1/2 tsp ground black pepper (can be done to taste)
  • 1 cup (uncooked) small soup pasta

Method

Add all ingredients except pasta to slow cooker. Stir. Cover and cook on low 12 hours. When finished, add cooked pasta, stir and serve.

 

Notes: For added flavor, add shredded cheese and serve with hot crusty bread. Can be served as a main course or appetizer. Recipe can be doubled and frozen.
