Key West Chicken & Black Bean Soup

Black bean soup with the flavors of the islands-cilantro, cumin and orange.
Ingredients
- 1 teaspoon minced garlic
- 2 Tablespoons brown sugar
- 1/4 cup tomato paste
- 1 Tablespoon chili powder
- 1 Tablespoon ground cumin
- 1 teaspoon dried cilantro
- 1/2 cup orange juice
- 1 8 oz can tomato sauce
- 1 28 oz can diced tomatoes, drained
- 1 14 oz chicken broth
- 1/2 cup diced onions
- 1 1/4 pounds chicken breast tenderloins, cut into bite size chunks
- 1 15 oz can black beans, drained

Method
In a 3 quart or larger slow cooker, combine garlic, brown sugar, tomato paste, chili powder, cumin and cilantro. Stir in orange juice, tomato sauce, drained tomatoes and chicken broth. Stir well, then add onions and chicken chunks. Cover and cook on low for 2 1/2 hours or until chicken is cooked through. Add black beans and cook on low for an additional 10 minutes.
