Jumpin Jambalaya

This hearty jambalaya is a delicious, low in fat, high in flavor meal full of fabulous ingredients such as sausage, shrimp, chicken, lobster, ham and turkey.
 

Ingredients

  • 1 live lobster, 1 1/2 lbs
  • 30 shrimp, uncooked and unpeeled
  • 3 links andouille sausage or polish kielbasa, sliced
  • 1 pkg smoked turkey thighs or wings, meat removed and cut into bite sized pieces
  • 1 smoked ham steak, cubed
  • 8 poached chicken thighs, meat removed and cut into bite sized pieces (reserve poaching liquid for chicken stock)
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1 large sweet onion, diced
  • 3 stalks celery, diced
  • 5 gloves garlic, minced
  • 2 28 oz cans of peeled whole tomatoes, chopped
  • 7 cups chicken stock, see above
  • 1 bottle clam juice
  • 1 tbsp olive oil
  • 1 tbsp black pepper
  • 1 tbsp white pepper
  • 1 tbsp cayenne pepper
  • 1 tbsp kosher salt
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp dried thyme
  • 1 tbsp dried oregano
  • 1 tbsp fresh parsley
  • 2 cups cooked wild rice
  • Crusty French bread

Method

Heat oil in large stock pot and saute onions, peppers and garlic until soft, about 10 minutes. Add spices and stir for a few minutes to soften and release fragrance. Add tomatoes, clam juice and chicken stock and bring to boil. Add lobster and shrimp, removing shrimp after 5 minutes, lobster after 10 letting cool, then peel shrimp and remove meat from lobster reserving the broth. Add andouille, ham, turkey and wild rice to broth and bring back to simmer. Add back chicken, shrimp and lobster meat letting the flavors blend. Serve in a large bowl with some crusty French bread on the side.
