Josie-Lynn's Chili

This chili recipe uses both beef and pork, plus kidney, white, and Bush's baked beans. It also contains chili seasoning mix, onions, celery, sweet peppers, chili sauce, vegetable juice, Rotel tomatoes, coriander and orange peel.
Ingredients
- 1 lb ground beef
- 1 lb ground pork or sausage
- 1 lb. dried kidney beans
- 1 cup dried white beans
- 1 package MILD chili seasoning
- 2 large onions, halved and sliced
- 3-4 stalks celery, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 2 cloves of garlic, minced
- 1 (1 lb 12 oz) can Bush's baked beans with onions
- 1 (12 oz) bottle of chili sauce
- 2 (11.5 oz) cans of V-8 juice
- 1/2 cup ketchup
- 2 cans Ro-Tel MILDER tomatoes with green chilies
- 1 teaspoon ground coriander
- 1 Tablespoon minced orange peel

Method
1. Soak dried beans overnight. Drain. 2. Saute beef and pork until no longer pink. Drain. Set aside. 3. In a large pot, put in the onions, celery, green & red peppers, & garlic. Saute until tender-crisp. 4. Add the dried beans, baked beans, chili seasoning, chili sauce, V-8, ketchup, tomatoes, coriander and orange peel. Bring to a boil. 5. Turn down to medium-low heat, cook several hours.
