Chunks of turkey sausage links combine with carrots, onions, celery, tomatoes, kidney beans, kale and spiral pasta in a beefy broth flavored with oregano and peppers.
 

Ingredients

  • 1/3 teaspoon canola oil
  • 1/4 pound turkey breakfast sausage links, chopped
  • 1 3/8 ounces of carrots, chopped
  • 1 1/4 ounces onions, chopped
  • 1 3/8 ounces celery, diced
  • 4 3/4 ounces canned tomatoes, diced
  • 1/4 cup red kidney beans, canned, rinsed and drained
  • 1/4 cup white kidney beans, rinsed and drained
  • 8 3/4 fluid ounces low-sodium beef broth
  • 1/2 teaspoon oregano
  • 1/4 teaspoon black pepper
  • 1/2 tablespoon parsley
  • 1/8 teaspoon hot pepper sauce
  • 4 3/4 fluid ounces spaghetti sauce
  • 3/4 ounce spiral macaroni, cooked
  • 1 package frozen kale

Method

1. Saute sausage in oil until brown. 2. Add vegetables; stir for 10 minutes. 3. Add beans and bring back to a strong simmer. 4. Add beef broth and seasoning. Bring to a boil. 5. Add macaroni and kale. Cover and simmer 45 minutes.

 

Notes: Rich Italian comfort food, serve with crusty Italian bread and a salad.
