Jo Ellen's Wild Rice Soup

Full of wild rice, potatoes, chicken and ham, this soup is sure to warm you up.
Ingredients
- 1 C. wild rice
- 1/2 stick butter
- 1 small onion
- 1/2 C. chopped celery
- 1/2 C. flour
- 3 14-oz.cans chicken broth
- 1/2 C. grated carrots
- 2 cloves garlic, minced
- 3-4 potatoes, peeled and diced
- 1/2 C. chopped chicken
- 1/2 C. chopped ham
- 2 C. milk
- 1/4 C. slivered almonds

Method
1. Wash wild rice and cook in 4 cups of water for 45 minutes or until done. 2. Melt butter in saucepan. 3. Saute' onion and celery in melted butter and add flour. 4. Slowly stir in 1 can of broth to make thickening. 5. Add grated carrots, minced garlic, diced potatoes, 2 cans of chicken broth, wild rice, chicken and ham. 6. Cook until potatoes are almost done. 7. Add milk and slivered almonds. 8. Simmer and serve.
Notes: This is the best wild rice soup I've eaten, and it is lower in fat and calories, because it does not use cream, as many do.
