Jessica's Black Bean Soup


Canned black beans are combined with onion, stewed tomatoes, & chilies, and seasoned with cumin, lemon juice & crushed red pepper to make this soup.



Ingredients:

  • 1 large onion
  • 2 cloves garlic
  • Oil
  • 2 cans black beans, drained
  • 1 can Del Monte stewed tomatoes
  • 1 can chicken (or vegetable) broth
  • 1 cup water
  • 2 tsp ground cumin
  • 1 dash red pepper flakes
  • 1 small can chopped green chilies, drained
  • 1 tblsp lemon juice
  • Sour cream
  • Tortilla chips

Method

Chop the onion and garlic into fine pieces. Saute them in a little oil until light brown. Add 1 can of the black beans and mash them. Then add the remaining beans, and all ingredients except sour cream and chips. Let boil gently for 10 minutes, stirring it occasionally, then it's ready.

Notes: Best served with a scoop of sour cream and chips.
