Canned black beans are combined with onion, stewed tomatoes, & chilies, and seasoned with cumin, lemon juice & crushed red pepper to make this soup.
Chop the onion and garlic into fine pieces. Saute them in a little oil until light brown. Add 1 can of the black beans and mash them. Then add the remaining beans, and all ingredients except sour cream and chips. Let boil gently for 10 minutes, stirring it occasionally, then it's ready.
Notes:
Best served with a scoop of sour cream and chips.
