Italian Sausage-Potato Soup

Italian sausage and onion are cooked and added to cubed potatoes with milk and butter. Mozzarella is sprinkled on at the last minute.
 

Ingredients

  • 5 lbs potatoes, peeled & cubed
  • 1 lb bulk Italian sausage
  • 1 large onion, chopped
  • 1 stick (1/2 cup) butter
  • 3 to 4 cups milk
  • 1 teaspoon dried parsley
  • 2 cups shredded mozzarella cheese
  • Salt and pepper to taste

Method

Began by boiling potatoes in water in a large pot until tender; drain. Meanwhile, brown sausage in large skillet but do not drain. (I recommend not draining the sausage because of the intense flavor that it will add to the soup.) Add onion to sausage and simmer about 10 minutes. Add butter to drained potatoes. Add sausage to potatoes. Add milk, salt, pepper, and parsley. Continue to simmer for 30-40 minutes on low heat. Just before serving, add cheese.

 

Notes: This is great served with some type of bread.
