Italian Cabbage Soup

A healthy, simple vegetarian soup recipe with cabbage, tomatoes, carrots and cannellini beans.
 

Ingredients

  • 1 carton vegetable broth
  • 1 can Italian style stewed tomatoes
  • 1/4 head cabbage, chopped
  • 2 carrots, peeled and sliced 1/2 inch
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • 1 tsp salt
  • 1 tsp pepper
  • 1 can cannellini beans drained and rinsed, optional

Method

Add broth and stewed tomatoes to a large pot. Add onions, garlic, carrot, cabbage, salt, pepper and beans. Simmer 1 1/2 hours on low heat.

 

Notes: This recipe is very simple and extremely filling and tasty.
