Hot Dog Stew

This thick mixture combines sliced franks, potatoes, canned peas, onion, and tomato sauce.
 

Ingredients

  • 4 small potatoes
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 medium onion, diced
  • 6 Hot Dogs
  • 1 15 oz can of sweet peas
  • 1 8 oz can tomato sauce

Method

Wash, peel and quarter potatoes; set aside. In a 3 qt. saucepan heat olive oil and butter on medium-low heat. Add onion and saute until slightly soft. Cut hotdogs into thin slices ("pennies"); add and continue to saute with onions. Add peas, tomato sauce and potatoes. Stir to blend; cover and cook over medium-low heat, stirring occasionally until potatoes are tender.

 

Notes: Serve warm with grated Italian cheese on top.
