Sometimes known as turkey frame soup, this uses the "carcass" of a roasted bird and cooks it with vegetables and noodles or rice.

  • Servings: 8-10


Shell ("frame or Carcass") of a Cooked Turkey
3 or 4 Stalk of Celery, cut into 6-8 pieces each
3 Large Carrots, cut into 6-8 pieces each
1 Large Sweet Onion, peeled and cut into 6-8 pieces
1½ Tbsp Salt, to taste
Very Cold Water
Noodles or Rice


In a very large pot put turkey, celery, carrots, onion & salt; fill pot with cold water to cover turkey & vegetables. Place on the stove; cover pot; cook on very low heat for 6-8 hours. After soup is cooked try to take out all bones, and remove any meat from bones; return meat to pot. After soup is done cook noodles or rice; drain. Add to soup; stir and heat.

Helpful Tips:

You may also use a chicken frame or carcass, or make small meatballs; just place meatballs right in the water; you don't have to cook them. They will cook in the soup. Serve this soup with a salad; great on a cold day.
