Hearty Vegan Chili


A healthy and delicious vegetarian chili with navy and black beans and a little crushed red pepper to add spice.



Ingredients:

  • 2 medium onions, chopped
  • 2 green bell peppers, chopped
  • 2 large ribs celery, chopped
  • 8 ounces of mushrooms (any variety) chopped coarsely
  • 6 cloves garlic, minced
  • 3 Tbsp olive oil
  • 6 bay leaves
  • 1/2 teaspoon crushed red pepper
  • 3 Tbsp dark chili powder
  • 1 Tbsp cumin
  • Salt and black pepper
  • 1 cup TVP (Textured Vegetable Protein)
  • 2 vegan veggie burger patties, crumbled
  • 2 cans vegetable broth or stock
  • 2 12 oz cans diced tomatoes, with juice
  • 2 Tbsp molasses
  • 1 can black beans
  • 1 can white beans (Great Northern or Navy)
  • 1 additional tsp chili powder
  • 1 additional tsp cumin
  • 1 cup chopped cilantro

Method

Sautee onions, peppers, mushrooms, celery and garlic in olive oil for five minutes on medium heat, with about a teaspoon of salt and a teaspoon pepper. Add bay leaves, chili powder, cumin, and red pepper flakes. Sautee for another two or three minutes, stirring constantly. Add TVP and veggie burger and toss for another minute. Next add vegetable broth and canned tomatoes. Simmer for fifteen or twenty minutes. Add canned beans and simmer for forty five minutes to an hour. Ten minutes before serving, add an additional teaspoon of chili powder and a teaspoon cumin. Add salt and pepper as desired. Just before serving, stir in chopped cilantro. Serve with a generous dollop of vegan sour cream.

Notes: This is a delicious, and more healthful, alternative to the cowboy classic. It's an indulgence you can feel good about, and it'll warm you just as good as the real McCoy.
