This hearty soup combines fresh vegtables, canned beans, and fresh sausage for a great meal.
Brown sausage in oil.
Add onion, carrot, celery and seasonings.
Saute until vegetables are soft.
Add garlic and saute 1 more minute. Add broth, beans, and kale.
Bring to a boil, reduce heat and simmer, covered, for 1 hour.
Add vinegar and simmer 5 minutes longer.
Adjust seasoning, remove bay leaf and serve.
