Hearty Sausage and Kale Soup


This hearty soup combines fresh vegtables, canned beans, and fresh sausage for a great meal.



Ingredients:

  • 1 Tbsp olive oil
  • 1 lb bulk Italian Sausage, or 4 links, casings removed
  • 1 medium onion, diced
  • 1 clove garlic, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 15 oz can cannelini beans, drained and rinsed
  • 1 32 oz carton chicken broth
  • 1 bunch kale, cleaned and chopped
  • 1 tsp thyme
  • 1/2 tsp red pepper flakes
  • 1 bay leaf
  • Salt and pepper, to taste
  • 1 Tbsp red wine vinegar

Method

Brown sausage in oil. Add onion, carrot, celery and seasonings. Saute until vegetables are soft. Add garlic and saute 1 more minute. Add broth, beans, and kale. Bring to a boil, reduce heat and simmer, covered, for 1 hour. Add vinegar and simmer 5 minutes longer. Adjust seasoning, remove bay leaf and serve.
