Hearty Crab Bisque with Bacon Crumbles

Sauteed onion and garlic are the base of this delicious crab bisque. The crumbled bacon is the perfect addition to this tasty soup.
Ingredients
- 2 tablespoons olive oil
- 1/4 cup red onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup butter or margarine, melted
- 2 tablespoons all purpose flour
- 1 1/2 teaspoons salt, optional
- 1 quart whole milk
- 1/4 cup sour cream
- 1 pound fresh or canned crabmeat, shells and cartilage removed
- 1/2 cup bacon, cooked and crumbled

Add olive oil to a large saucepan over medium high heat, then cook until hot, 2-3 minutes. Add onion, garlic and butter then saute until onion is tender, about 3 minutes. Add flour and salt then stir to combine all ingredients. Slowly stir in milk and sour cream, stirring continuously until well combined. Add crabmeat and continue to cook until hot, 3-4 minutes. Pour into individual serving bowls and sprinkle bacon.
