Great home-made chicken soup full of fresh vegetables and herbs that you can prepare ahead of time.
Boil chicken in large pot. Remove to cool. Once cool, cut and de-bone. Drain pot. Start with new water for soup base. Cut all vegetables to bite size pieces. Into pot put chicken, vegetables and spices. Let cook on simmer to medium for about 2 to 3 hours. A 1/2 hour prior to serving add rice, cover and allow to cook for at least 25 minutes.
Notes:
I add other vegetables as what is in season or in my garden, same goes for herbs, I usually pick fresh from my garden. As noted there is no added salt, and if caned vegetables are used I drain them and rinse in colander. This chicken soup is great on a cold day along with a garden salad and corn bread. You may also use the water from the chicken for a more flavorful but less healthy alternative.
