Healthy Chicken Barley White Chili

This chili is healthy and hearty. With a little bit of jalapeno for some heat and flavor, this chili is a great meal.
 

Ingredients

  • 2 tablespoons olive oil
  • 2 boneless skinless chicken breasts, cut into 1/2 inch cubes
  • 1 large white onion, chopped fine
  • 2 cloves garlic, chopped fine
  • 1 11-oz can pickled jalapenos, drained and chopped fine
  • 4 tablespoons white all-purpose flour
  • 1 large can chicken broth
  • 1 tablespoon hot pepper sauce
  • 1/2 cup pearl barley
  • 4 tablespoons shredded cheddar cheese

Method

Heat 1 tablespoon olive oil in large nonstick skillet, 3-4 inches deep, and brown chicken breast over medium high heat. Remove chicken to a warm plate. Add additional tablespoon olive oil and saute onion, garlic, and jalapenos over medium-high heat until softened. Return chicken to skillet. Sprinkle flour over chicken and vegetable mixture and saute for another 2 minutes at medium-high heat, stirring constantly. Add chicken broth and bring mixture to boil over medium high heat. Reduce heat and simmer covered for 15 minutes. Add pearl barley and continue simmering for 20-25 minutes or until barley is tender and sauce is thickened. Remove from heat, stir in hot pepper sauce, and ladle into bowls. Top with 1 tablespoon shredded cheddar cheese.
