Hashmans Potato Soup

This hearty potato soup is packed with different flavors from knackwurst and ham to fresh onion and seasonings.
 

Ingredients

  • 2 lbs potatoes, peeled
  • 1 large onion
  • 1/2 lb bacon
  • 6 knackwurst
  • 1 slice ham, 1/4-1/2 inch thick
  • 1/4 cup white vinegar
  • Salt and pepper to taste
  • Onion powder to taste
  • Garlic powder to taste
  • Celery powder to taste
  • Chopped fresh parsley to taste
  • Basil to taste
  • Thyme to taste
 
Method

Boil potatoes in a large pot. Cut bacon and ham into small pieces. Chop onion and add all to frying pan until brown. Cut up 3 knackwurst into bite sized pieces and add to onion and bacon mixture. Add a little basil, onion powder, pepper and thyme to pan. The potatoes should now be boiled. Don't drain, but using a potato masher, crush potatoes until there are no big pieces left. It should look a little thin, but it will thicken up soon. Place potato mixture back onto heat and bring to a boil. To thicken soup, mix a little flour, salt and water in a cup. Make it thick, and no lumps in this makes it taste a lot better later. Add to boiling potato soup mixture then add vinegar. Add mixture from frying pan. Add the grease from bacon and onions, if desired. Add remaining ham and knackwurst then season to taste. It can be placed into a crock pot at this point, or just simmer it for a hour or two. If leaving in the pot on the stove, stir frequently to avoid burning.
