Ham Chowder

Ham and basil flavor this easy potato chowder. It's a quick soup to fix on a busy weeknight.
 

Ingredients

  • 2 potatoes, peeled and cubed
  • 1-1/2 cups water
  • 2 t. instant chicken bouillon
  • 1/2 t. dried basil leaves
  • 1/2 t. black pepper
  • 1 T. cornstarch
  • 1-1/2 cups milk
  • 2 cups cubed ham

Method

In large saucepan over medium-high heat, combine potatoes, water, bouillon, basil, and black pepper. Heat to boiling; reduce heat to low. Cover. Simmer 10 minutes or until potatoes are tender, stirring occasionally. Stir together cornstarch and milk. Stir into potato mixture. Cook and stir over medium-high heat 5 minutes or until thickened. Stir in ham. Cook 2 minutes or until thoroughly heated.
