Halibut Chowder

Halibut chunks are cooked in a mixture with evaporated milk, whipping cream, celery, carrots, and onion. The mixture is then thickened with instant mashed potato flakes.
 

Ingredients

  • 1 lb. sliced bacon
  • 4 cups chopped potatoes
  • 2 cups diced carrots
  • 1 onion, diced
  • 1 cup diced celery
  • 4 cups water
  • 1 can evaporated milk
  • Salt & pepper, to taste
  • 1 pint heavy whipping cream
  • 1 lb Halibut, skin and bones removed and cut up
  • Instant Mashed Potato Flakes, to thicken

Method

Cook bacon in a Dutch oven; drain and crumble, reserving about 1/4 cup of the drippings. Saute vegetables in reserved drippings. Add water and milk; let simmer for 20 minutes. Add cream and halibut let simmer for another 15 to 20 minutes. Add potato flakes to thicken, about 1/2 cup. Season with salt & pepper to taste. Add crumbled bacon and serve.

 

Notes: You can also use thyme, if you like the taste.
