  • Jambalaya Anyone?

    My husband mastered his recipe when we moved to Lousiana. It's always great, but it's best when he uses smoked duck in it. Yum! I can post his recipe if anyone would like it.

  • Do You Buy Canned Soups?

    One thing I do is make way too much soup ...I have got to start cooling the stock and freezing some of it. My husband doesn't mind taking it to work for his lunch  but I don't like eating things more than 2-3 times. ...does anyone have any tips for freezing the stock?...Sherry8

  • What's Your Favorite Cracker for Soup?

    We usually have saltines along with our soup...my husband just butters his and eats them. I will usually spread just peanut butter on them and eat them with chicken/turkey soup. Chili I put my crackers all broken up in it...plain.

    The neighbors gave me a cookie platter/dessert for Christmas and on it she had some of the ranch oyster crackers...they were really good. ..Sherry8

    gryglagreen, I do the same thing with soups.  I like that soups are  easy to adapt.

  • Tortellini soup

    Tortellini Soup


    3 cans, 14 1/2 oz each, chicken broth
    2 pkg, 9 oz each, refrigerated tortellini
    14 1/2 oz can diced tomatoes with juice
    4 green onions, choped
    2 garlic cloves, minced
    1 tsp dried basil
    shredded Parmesan cheese, to taste

    sliced mushrooms, optional

    In a large pot, bring broth to a boil.
    Add tortellini , tomatoes, onions, garlic and basil.
    Add mushrooms, if using.

    Reduce and simmer 10 minutes.
    Garnish with cheese.



    Notes:
    I use frozen tortellini and add sliced mushrooms.
