Granny's Tomato Dumpling Soup


A family heirloom recipe--soft dumplings in a savory tomato broth.



Ingredients:

  • 1 stick butter
  • 6 15 ounce cans petite diced tomatoes
  • 1 cup heavy whipping cream
  • 1 cup self rising flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon parsley flakes

Method

In Dutch oven, on medium heat, add tomatoes and butter, cook until butter has melted and soup is at a gentle boil. While tomato mixture is heating, stir together remaining ingredients in a mixing bowl. When soup is at gentle boil, drop dough mixture by heaping teaspoonfuls into soup, cover, reduce heat to simmer, and let simmer for 30 minutes.

Notes: My granny used to make this when I was little, and no one seemed to know how she did it, so I tried for years to come up with a match, and I finally did it. It was so nice to finally have a childhood favorite in the family again.
