Five Can Black Bean Soup


How simple, open a few cans and dinner is served.



Ingredients:

  • 1 can black beans, 15oz
  • 1 can diced tomatoes, 15 oz
  • 1 can sliced potatoes, 15 oz
  • 1 can corn, 7 oz
  • 1 can diced green chilies, 4 oz
  • 1-2 bullion cubes, beef or vegetable
  • Paprika
  • Salt
  • Chili powder
  • Garlic or garlic powder
  • Onion - diced and cooked

Method

Put bullion and 1 cup water into soup pot. Add black beans and tomatoes. Take potatoes and cut slices into bite-size pieces and add to pot. Add green chilies. Bring to boil and add garlic (powder) and onion. Stir and lower heat to simmer. Cook for 30-45 minutes. Add whole kernel corn. Add more water if needed. Add seasonings to taste (salt, paprika, chili powder). Cook for another 15-30 minutes. Serve.

Notes: Can add 1 pound of cooked hamburger or ground round to recipe with potatoes. Served with corn bread or corn muffins, this makes a great meal on those cold fall and winter days. Recipe freezes wonderfully.
