Favorite Veggie Vegetable Soup

Cooked dry beans are combined with crushed tomatoes, corn, lima beans, green beans, leeks, sweet potatoes, spinach, carrots & collard greens.
 

Ingredients

  • 1 cup mixed dry beans
  • 1/2 of a 28 oz can crushed tomatoes
  • 1 1/2 cups corn kernels
  • 1 1/2 cups lima beans
  • 1 1/2 cups green beans
  • 6 cups water
  • 2 small leeks, sliced
  • 1 or 2 sweet potatoes, chopped
  • 1/2 pkg. frozen spinach
  • 2 medium carrots, chopped
  • 5 veggie bouillon cubes
  • 2 small or one large bunch fresh collard greens, chopped
  • Crackers

Method

Soak beans overnight in water to cover 2" above beans, stirring once or twice. Drain. Cover with fresh water and cook until just tender. Drain and add beans to soup pot. Add crushed tomatoes, water and all vegetables except collards (add those last) and bouillon cubes. You may need to add additional water, depending on how thick or thin you like your soup. Bring to a boil and cook on a medium heat about 30 minutes, adding greens the last few minutes or until everything is tender. Serve with crackers.

 

Notes: You can add all ingredients and cook on low heat for a few hours in a crock pot as well.
