Excellent Polish Sausage Soup

A hearty soup with polish sausage and lots of vegetables like onion, celery, cabbage, and carrots. All simmered with savory herbs in a bouquet garni.
 

Ingredients

  • 1 lb. fresh Polish sausage, sliced as heavy as you wish
  • 2 tbls. butter or margarine
  • 1 cup chopped onions
  • 2 cups chopped celery & leaves
  • 4 cups shredded cabbage
  • 2 cups sliced carrots
  • 3 cloves garlic, minced
  • 1 bay leaf (optional)
  • 1/2 tsp. dry thyme
  • 2 tbls. vinegar
  • 1 tbls. kosher salt
  • 1 1/2 cups beef stock (from
  • 1 1/2 to 2 lbs. beef shank cross-cuts)
  • 1/2 lb. country bacon
  • 5 cups water
  • 3 cups cubed potatoes
  • optional :
  • add a bouquet garni:
  • Cut a 10-in. sq. double-layered cheesecloth. Place 8 springs parsely, 2 bay leaves, 10 lightly curshed whole black peppercorns, and 4 or 5 sprigs each of fresh thyme and marjoram on center of cheesecloth. Draw up corners of square to create a bag; tie with clean kitchen string.

Prepare Bouquet Garni; set aside in a 10- to 12-qt. stockpot or Dutch oven, cook bacon until crisp, stirring frequently. Remove with slotted spoon. Drain on paper towels, reserving 2 tablespoons drippings in stockpot. Brown beef shanks on both sides in reserved drippings. In a large kettle, melt butter; add sausage, onion and celery are tender. Add remaining ingredients, except potatoes. Cover and cook for 1 1/2 hours. Add potatoes, cover and cook for 20 minutes longer.

 

Notes: Bacon, bouquet garni are optional...
