Enchillada Soup


If you like enchilladas, you'll love this soup-chicken, black beans and enchillada sauce make a savory, home cooked meal.



Ingredients:

  • 3 skinned chicken breasts
  • 1 whole medium sized onion
  • 1/2 of small can of green chopped chilies
  • 1 15 oz can of black beans
  • 2 cups of frozen corn
  • 2 pkgs of enchilada sauce mix (any brand)
  • 1 Tablespoon chili pepper
  • 2 15 oz cans of liquid enchilada sauce
  • 1 dash of garlic salt
  • 1 tsp pepper
  • Sour cream
  • Cheddar cheese
  • Fresh chopped onions
  • Tortilla chips
  • Chopped black olives

Method

Boil chicken in a large pot or bake in a slow cooker and shred in liquid. The broth should fill half the pot. Add all other ingredients, stir until all ingredients are dissolved and bring to a boil. Then reduce temperature and simmer on low for 1 hour on stove top. This recipe may also be done completely in a slow cooker, just let it cook all day.

Notes: Garnish each serving with cheddar cheese, chopped black olives, fresh chopped onions and a few tortilla chips.
