Elegant Tomato Bisque

This tomato soup is creamy and full of flavor--makes a great appetizer for a formal dinner.
Ingredients
- 1 stick unsalted butter (reserve 1/2)
- 1 cup all purpose flour, sifted
- 2 medium yellow onions, diced fine
- 3 medium cloves garlic, minced
- 2 Tablespoons dark brown sugar
- 1 Tablespoon Worcestershire sauce
- 1 1/2 Tablespoons fresh basil, chopped
- 2 28-oz cans tomatoes, pureed
- 1 quart whole milk
- 2 cups heavy cream
- 1 cup chicken stock
- 2 bay leaves
- 1 teaspoon salt
- 1 teaspoon white pepper
- 6 basil leaves for garnish
- 6 Tablespoons sour cream for garnish

In large heavy Dutch oven or stock pot, saute onions in butter for several minutes on medium heat until clear. Add garlic and saute one more minute. Add brown sugar, Worcestershire sauce, basil and milk, stirring to blend. Reduce heat to simmer. In a separate sauce pan on medium heat, melt the other 1/2 stick of butter and add flour. Stir, making a roux, for about 1 minute. Add some of the hot liquid from Dutch oven to the roux, stirring to blend. Immediately add roux back into soup mixture in Dutch oven and stir to blend using a wire whisk. Add tomatoes, cream, chicken stock, salt, bay leaves and white pepper. Simmer 10 to 15 minutes. Remove bay leaves and strain soup through wire strainer before serving. Place in individual soup bowls and top each with a tablespoon of sour cream with a basil leaf on top.
