Frozen roasted green chilies (mild or "hot") are combined with cream of chicken soup and cooked sausage to make this soup.

Ingredients

  • 2 - 26 oz cans (family size) condensed cream of chicken soup
  • 1 - 13 oz container of roasted frozen chopped green chilies (your choice of mild or hot) (2 lbs of fresh roasted chilies can be substituted)
  • 1 lb mild or sage sausage

Method

Put both cans of Cream of Chicken soup and the green chilies in a slow cooker. Add only half the amount of water (ONE can) for the soup. Cook on high for 90 minutes. Stir it all together well. Meanwhile brown the sausage and drain. Add to the slow cooker. Turn heat setting down to low after the 90 minutes and leave it until you are ready to eat.

Notes: Adding hot chiles rather than mild makes the soup quite spicy. Start with mild and experiment for your tastes. Serve as a main dish, side dish or ladle over burritos for an added zing. Serve with fresh whole wheat rolls to cool the burn.

Number of Servings: 4-8
