Easy Green Chili

Cubes of beef stew meat are cooked with hominy or corn tomatoes, onion, and green chilies until tender, spooned into dishes and topped with canned beans.
Ingredients
- 3/4 lb. beef stew meat
- 1-16 oz can hominy or one 12-oz. can whole kernel corn, drained
- 1 14 1/2 oz. can tomatoes, cut up
- 1 large onion, chopped
- 1 4 oz can diced green chili peppers, drained
- 1/2 cup water
- 1 tsp. dried oregano, crushed
- 1 tsp. instant beef bouillon granules
- 2 cloves garlic, minced
- 1 16 oz. can red kidney beans or pinto beans, drained and warmed

Method
Trim separable fat from stew meat, and then cut into 3/4 inch cubes. In a 3-qt. saucepan stir together meat, hominy or corn, tomatoes with juice, onion, chili peppers, water, oregano, bouillon granules, and garlic. Heat until boiling. Reduce heat. Skim off foam. Cover and simmer about 1 1/2 hours or till meat is tender. To serve, ladle mixture into individual bowls and top with hot kidney or pinto beans.
