Easy Creamy Chili Soup

This is as the name says a very easy chili made creamy from the addition of lots of cheese melted in a mix of beans and tomatoes.
Ingredients
- 3 Tbsp extra virgin olive oil
- 1 cup frozen diced onions
- 1 garlic clove, mashed
- 1 cup ground beef
- 2 16 oz cans spicy diced tomatoes
- 2 cans (16 oz each) red beans in chili sauce (mild or spicy)
- 1/2 cup frozen spinach
- Salt
- 2 tsp cumin
- 2 tsp chili powder
- 1 tsp sugar
- 2 cups shredded cheddar cheese

Method
In medium skillet saute onion and garlic till golden, add beef and brown. Set aside. In a soup pot combine tomatoes, beans, salt, cumin, chili powder and sugar. Cook on medium heat for 20 minutes. In food processor puree mixture till creamy. Empty back in soup pot. Add browned beef and heat for 10 minutes or until bubbly. Serve in deep soup bowls and sprinkle cheese on each one.
