Easy Chicken-Cheddar Tortilla Soup

This soup combines canned chunk chicken with Rotel tomatoes, kidney beans, black beans, corn, cheddar cheese, flour, seasonings & tortilla chips.
Ingredients
- 2 cans chunk chicken
- 2 cans diced tomatoes with green chilies
- 3 cloves garlic
- 1 large yellow onion
- 8 ounces grated sharp cheddar cheese
- 1 can dark kidney beans
- 1 can black beans, drained
- 1 can sweet corn kernels
- 3 tbsp flour
- 1 tbsp chili powder (or to taste)
- 2 tbsp olive oil
- 1-2 tbsp hot sauce (or to taste)
- 1 bag tortilla chips

Method
Dice onion and garlic, add to saute pan with olive oil. Saute on medium for 10 minutes, and then add flour. In the meantime, add chicken, tomatoes, corn, kidney beans and black beans to a large pot. Add chili powder and hot sauce to taste. Cook on medium for 10 minutes. Add onion and garlic and cook on medium for 10 minutes. Add cheddar cheese and 8 ounces of crumbled tortilla chips to pot. Simmer on low for an additional 10 minutes, occasionally stirring. Serve hot sprinkled with remaining slightly crushed tortilla chips.
