Donna's Awesome Chili with Love


Chunks of beef, onion & beans are simmered in tomatoes & tomato paste, seasoned with chili powder, cumin & garlic powder, and sweetened with brown sugar.



Ingredients:

  • 2 Tbsp oil
  • 4 lbs boneless beef roast (cut into small chunks)
  • 4 cups onion (coarsely chopped)
  • 1 1/2 tsp salt
  • 1 Tbsp black pepper
  • 1/3 cup chili powder
  • 1/3 cup cumin
  • 1 Tbsp garlic powder
  • 2- 28 oz cans diced tomatoes
  • 2- 14.5 oz cans diced tomatoes
  • 4- 6 oz cans tomato paste
  • 3- 16 oz cans dark red kidney beans
  • 1/3 cup dark brown sugar (firmly packed)

Method

I would suggest using a large soup/stock pot. Put the oil in the pot. Add the cut up meat, and start to cook over med./high heat, then add the onions. Cook and stir. The meat should start to make its own liquid; that's good, you want that. As the onions start to cook and get mixed in, start to add all your spices. Stir and stir. I like to add the spices to cook with the meat because it seems to work out better that way. Once the meat is all cooked, add the diced tomatoes, and stir and stir. Then add the tomato paste, one can at a time and stir...then add the kidney beans and stir....then add the brown sugar and stir. Lower heat and continue to cook about 1 to 1 1/2 hours, stirring now and again. Everything tends to sink to the bottom so you want to keep it stirred up so it won't stick to the bottom. And most of all, don't forget the Love! Serve with shredded cheddar cheese and sour cream. Also, this chili is in good company with homemade corn bread and/or biscuits.

Notes: I'm not exactly sure how much this recipe makes, but it was enough to feed 7 people with second helpings. Usually it takes me about an hour to put it all together, including cutting everything up. But again, it all depends on how much coffee you're drinking and how much talking you're doing!
