Dippy Vegetable Soup

This soup is rich and full of flavor. There are plenty of vegetables and the soup is nicely finished off with French onion dip.
 

Ingredients

  • 2 cans beef broth
  • 1 cup V8 juice
  • 1 tbsp Worcestershire sauce
  • 2 tbsp dried onion
  • 1 bay leaf
  • 1 tsp Italian seasoning
  • 1/2 tsp oregano
  • 1 tsp onion powder
  • 1 tsp garlic powder or 2 fresh chopped garlic cloves
  • 1/2 red onion, chopped
  • 8 oz frozen broccoli, thawed
  • 8 oz frozen vegetable mix, thawed
  • 8 oz frozen asparagus, thawed
  • 2 leek stalks, chopped small
  • 4 oz French onion chip dip
  • Favorite croutons
 
Method

Place first 10 ingredients in pot on medium heat and cook 1/2 hour. Add next 5 ingredients and cook another 15 minutes. Serve with croutons or warm biscuits.
