
Chunks of zucchini are cooked in broth and pureed smooth. Minced onion & herb are added, plus whipping cream, if desired. Serve warm or chilled.
Cook zucchini in stock until tender. Pour off stock and reserve. Puree zucchini in a blender or food processor. Pour into saucepan. Stir in reserved stock, onion and seasonings.
Heat throughly, stirring to prevent scorching. Serve hot or cold, stirring in cream at serving time. Garnish with parmesan cheese.
Notes:
You can omit the heavy cream that's added before serving, but I like the richness of it in the soup.
