Debbie's White Chili

This white chili is made by blending vegetables with cubes of chicken, navy beans & pepper-jack cheese in a broth and whipping cream mixture.
Ingredients
- 4 boneless skinless chicken breast halves, cooked & cubed
- 1 stalk celery
- 2 large onions
- 1 carrot
- 1 teaspoon chopped fresh garlic
- 1 quart chicken stock or broth
- 1 quart heavy whipping cream
- 2 lb pepper-jack cheese, cubed or shredded
- 1 28-32 oz can white navy beans
- Cornstarch & cold water

Method
Process celery, carrot, onions, and garlic in a food processor until nearly smooth. In a heavy soup pot saute vegetables with cooked chicken in a little oil until tender. Add chicken stock & heavy cream. Bring to a boil. Add pepper-jack cheese and beans, stirring constantly until cheese is melted. Bring just to a boil. Thicken to your desired consistency with a mixture of some cornstarch and cold water. Add to the boiling mixture while stirring constantly. Boil 1 minute.
Notes: This also can be made into a thick consistency, processed, and served hot or cold as an appetizer dip with crackers or chips.
