Debbie's Chicken Soup

Nothing tastes better than homemade chicken noodle soup--this easy to make version is warm and comforting.
Ingredients
- 6-8 chicken thighs
- 5 large carrots, peeled and sliced
- 4 stalks celery, chopped
- 1 onion, chopped
- 1 cup chopped mushrooms
- 1 tsp minced garlic
- 1/2 box macaroni noodles
- 10 cubes chicken bouillon
- 2 Tbsp dried parsley
- 1 Tbsp dried oregano
- 1 Tbsp dried basil
- 1/2 tsp black pepper
- 1/2 tsp garlic salt

Method
In large soup pot, boil chicken, remove from water and save broth. Skim fat off broth and add chicken bouillon cubes. Add minced garlic, chopped onion, celery, carrots and mushrooms to boiling broth. Add all spices while vegetables are cooking. Allow chicken to cool and remove skin, fat and bones and discard. Shred or chop chicken and add to soup mixture. Boil 1/2 box macaroni (either shells or elbow) in separate pan of boiling salted water. Drain pasta and add to soup mixture after vegetables have finished cooking.
Notes: You can use 2-3 chicken breasts to substitute for thighs if you like white meat. I use mini macaroni shells because they fit in the spoon well without a mess.
