Curried Carrot Soup


This side-dish soup can be served along with a beef or pork roast or as an appetizer soup to start a meal. Carrots are cooked in a curried broth mixture and pureed.



Ingredients:

  • 1 medium onion, chopped
  • 1 teaspoon minced garlic
  • 1 tablespoon butter
  • 6 carrots, peeled and thinly sliced
  • 1/2 teaspoon salt
  • 2 teaspoons curry powder
  • 1 tablespoon packed brown sugar
  • 4 cups reduced-sodium chicken broth
  • 1/2 cup dairy sour cream (optional)

Method

In a large stockpot cook onion and garlic in butter over medium heat until soft, about 8 minutes. Add carrots, and remaining ingredients and simmer covered until carrots are very tender, about 30 minutes. Working in batches puree soup in blender and return to pot and heat through. Top each serving with sour cream, if desired.

Notes: This is a great soup to serve as a first course for a holiday meal. It's warm and has a slightly sweet note to it. Very comforting and very delicious.
