Creole Maque Choux Chowder

Maque choux is a classic Cajun summer dish, made with fresh corn and tomatoes. Try this winter version when you just can't wait for hot weather.
 

Ingredients

  • 4 slices bacon
  • 1 cup diced tasso (or ham)
  • 1 large onion, diced
  • 1 large bell pepper, diced
  • 1 15 ounce can diced tomatoes
  • 1 15 ounce can corn kernels
  • 1 15 ounce can cream style corn
  • 1 teaspoon salt or to taste
  • 2 cups milk
  • 1/2 cup sliced green onion tops

Method

Cook bacon until crisp in Dutch oven or large sauce pan. Remove, crumble and reserve, leaving fat in pan. Add tasso and saute over medium heat until golden at edges. Remove tasso with slotted spoon and reserve. Place onion and bell pepper in same pan and saute until tender crisp and onion is just beginning to color. Add tomatoes, bring to boil, and scrape up all brown bits in pan. Add corns and salt and stir in milk. Return bacon and tasso to pan and heat to serving temperature. Ladle into bowls and sprinkle with green onion slices.

 

Notes: Tasso is a highly seasoned, intensely flavored smoked pork.
