Creamy Sweet Potato and Apple Soup


Sweet potatoes, onions and apples are cooked in apple juice with thyme and basil, then pureed and combined with whipping cream.



Ingredients:

  • 1 Tablespoon vegetable or canola oil
  • 1 1/2 cups chopped onion
  • 2 pounds sweet potatoes (yams), peeled and cut into 1-inch cubes
  • 2 medium tart apples (peeled, cored and cut into 1-inch cubes)
  • 3 cups chicken broth, homemade or canned reduced-salt
  • 3/4 cup apple juice
  • 1 Tablespoon fresh thyme, finely chopped
  • 1 Tablespoon fresh basil, finely chopped
  • 1/4 teaspoon freshly ground black pepper
  • 3/4 cup heavy whipping cream

Method

Heat oil in a large saucepan over medium-high heat, until hot but not smoking. Add the onions and cook, stirring occasionally, until tender (about 3 minutes). Add potatoes, apples, broth, juice, thyme, basil and pepper. Cover and bring to a boil. Reduce heat and simmer until potatoes are tender, about 16-18 minutes. Remove from heat. Using an immersion blender, puree soup until smooth (or puree soup, in batches, in a standard blender or food processor. Return to pot.) Add cream and heat through.

Notes: When there is a chill in the air, this easy soup will warm your insides. Use it as a first course or side dish.
