Sweet potatoes, onions and apples are cooked in apple juice with thyme and basil, then pureed and combined with whipping cream.
Heat oil in a large saucepan over medium-high heat, until hot but not smoking. Add the onions and cook, stirring occasionally, until tender (about 3 minutes). Add potatoes, apples, broth, juice, thyme, basil and pepper.
Cover and bring to a boil. Reduce heat and simmer until potatoes are tender, about 16-18 minutes. Remove from heat.
Using an immersion blender, puree soup until smooth (or puree soup, in batches, in a standard blender or food processor. Return to pot.) Add cream and heat through.
