Peanut butter and yogurt give this creamy lentil and vegetable soup a unique flavor.
Saute onion, celery and carrots in olive oil until translucent. Add salt, pepper, thyme, rosemary and bay leaves as you saute. Add lentils and stir together. Add water and bring to a boil. Simmer for about 1 hour or until lentils and vegetables have softened. Meanwhile stir together yogurt and peanut butter. Remove soup from heat and stir in yogurt and peanut butter mixture. Remove bay leaves before serving.
