This broccoli soup is made using fresh garlic and onions for a great flavor.
Saute onions and garlic in butter and olive oil about 3 minutes, season with salt and pepper.
Add brocolli, carrots, thyme and saute for about 5 minutes.
Add white wine and pour in chicken broth and simmer for 10 minutes or until all veggies are soft.
Cool mixture slightly.
Ladle into a blender in batches and puree until smooth and return to pot. Add cream and bring just to a boil. Adjust seasonings accordingly.
Simmer until thickened.
