This creamy cheese and onion soup has the special added ingredient of white wine.

•2 Tablespoons Butter
•1/2 Cup Finely Chopped Vidalia Onion
•1/4 Cup Minced Celery
•2 Tablespoons Flour
•1/2 Teaspoon Pepper
•1/2 Teaspoon Dry Mustard
•1 Cup Milk
•1 (10 3/4 Ounce) Can Chicken Broth
•1/4 Cup Dry White Wine
•2-1/4 Cups Shredded Sharp Cheddar Cheese
•1 Tablespoon Fresh Chives, snipped


Melt the butter in a 2-quart saucepan over medium heat. Add the onion and celery and cook for 3 minutes. Stir in the flour, pepper, and dry mustard. Slowly stir in milk and broth. Stir in white wine. Allow mixture to come to a boil and cook for 1 minute, stirring constantly. Stir in cheese. Reduce heat to low, and stirring constantly, cook until cheese is melted. Ladle into 4 soup bowls. Garnish each bowl with fresh chives sprinkled on top.
