Creamy Vidalia Onion Cheddar Soup With White Wine & Fresh Herbs

Ingredients:
| •2 Tablespoons Butter | |
| •1/2 Cup Finely Chopped Vidalia Onion | |
| •1/4 Cup Minced Celery | |
| •2 Tablespoons Flour | |
| •1/2 Teaspoon Pepper | |
| •1/2 Teaspoon Dry Mustard | |
| •1 Cup Milk | |
| •1 (10 3/4 Ounce) Can Chicken Broth | |
| •1/4 Cup Dry White Wine | |
| •2-1/4 Cups Shredded Sharp Cheddar Cheese | |
| •1 Tablespoon Fresh Chives, snipped | |
Directions:
Melt the butter in a 2-quart saucepan over medium heat. Add the onion and celery and cook for 3 minutes. Stir in the flour, pepper, and dry mustard. Slowly stir in milk and broth. Stir in white wine. Allow mixture to come to a boil and cook for 1 minute, stirring constantly. Stir in cheese. Reduce heat to low, and stirring constantly, cook until cheese is melted. Ladle into 4 soup bowls. Garnish each bowl with fresh chives sprinkled on top.
