Creamy Chicken Potato Soup

Serve this tasty and creamy homemade soup with warm biscuits or rolls. What a treat on a cold winter night.
 

Ingredients

  • 1 lb boneless skinless chicken breasts, cut into 1 inch pieces
  • 4 medium carrots, peeled and chopped
  • 4 stalks celery, chopped
  • 2 medium yellow onions, chopped
  • 2 tbsp minced garlic or 4 large cloves, minced
  • 1/2 cup heavy cream
  • 3 tbsp butter
  • 4 cups frozen diced hash brown potatoes
  • 1 cup dry mashed potatoes
  • 3 cups chicken broth
  • 3/4 tsp salt
  • 1/2 tsp ground black pepper
  • 1/2 tsp dry parsley flakes
  • 1 tsp dry basil
  • 1/2 tsp crushed red pepper flakes
 
Method

In a large soup pot, over medium heat, saute chicken in 1 tbsp butter until golden brown and cooked through then set aside. Add remaining butter to pot, with onions, carrots and celery. Cook over medium heat, until onions start becoming translucent. Return chicken to pot, and add broth, spices, heavy cream and hash brown potatoes. Heat to a boil, stirring frequently, then reduce to low heat. Add cream and mashed potatoes. Simmer 30-45 minutes until soup is heated through. Add salt and pepper to taste.
