Cowboy Corn Chowder


This tasty corn chowder is cooked with the corn cobs for flavor. If you like your soup a little thicker, add some cornstarch to the mixture.



Ingredients:

  • 3 ears fresh corn shucked, about 2 1/4 cups  
  • 3 table spoons of butter  
  • 3/4 cup chopped onion  
  • 3 cups milk  
  • 2 tablespoons flour  
  • 2 cups diced peeled potatoes  
  • 3/4 cup diced ham (about 4 ounces)  
  • 1 teaspoon salt  
  • 1/8 teaspoon black pepper  

Method

Cut kernels from cobs using a sharp knife, reserve kernels and the cobs. In a medium saucepan over medium heat melt butter. Stir in onion; cook and stir until tender about 5 min. In a bowl thoroughly combine milk with flour stir into saucepan add reserved corn cobs, potatoes, ham and cook until potatoes are tender, approximately 30 min. Remove cobs and add corn, return to boil and then simmer for 15 min.

Notes: This isn't too thick of a soup, so I like to add corn starch to thicken it a little.
