Corn Chowder with Ham

This chowder contains not just ham and cream-style corn, but also has potatoes, carrot, onion, cheese and both milk and evaporated milk.
Ingredients
- 3 pounds potatoes, peeled & chopped
- 1 c chopped carrot
- 1 Tb. margarine
- 8 ounces diced, cooked ham
- 3/4 c. chopped red onion
- 2 (15 oz) cans creamed corn
- 1 (12 oz) can evaporated milk
- 3/4 c. milk
- 1/4 c. margarine
- 8 oz pkg processed cheese, cubed
- Crushed red pepper, salt & pepper to taste

Method
Put potatoes and carrots in a large soup pot and add just enough water to cover. Boil for 15 minutes, or until barely tender. Melt 1 Tb. margarine in a small skillet, add ham & onion. Saute until onions are tender and nearly transparent. When potatoes are just tender, stir in ham & onion mixture, corn, evaporated milk, milk, margarine, cubed cheese, and seasonings. Cook for 10 minutes or until cheese is melted and heated throughout.
Notes: Sometimes I add a can of drained white whole kernel corn for extra sweetness & variety. It's also great topped with shredded cheddar cheese.
