Coleslaw Soup

This soup is easy to put together, and the long cooking develops the flavor. Ham, coleslaw, onion, sweet pepper, and herbs all combine to add to the flavor.
Ingredients
- 1 Large Package of coleslaw mix with carrots
- 1 red sweet pepper, cut in bite-size strips
- 1 sweet onion, cut into thin wedges
- 1 smoked ham hock or meaty ham bone
- 3 Quarts water
- 3 Tbsp. chicken base
- Salt and pepper to taste
- 1/2 tsp dried majoram, crushed
- 1 cup noodles, cooked and drained

Method
Place all but the noodles in a large soup kettle and simmer, covered, for at least 3 hours. Remove the ham hock and strip meat off the bones, discard bones. Cut the meat in bite sized pieces, add back to soup. Add noodles, and bring soup to a boil. Serve in large bowls with plenty of bread and butter.
